You will need
1/2 cup of strong Italian dressing
4 boneless and skinless, small chicken breast halves (1 lb)
2 cups of diced potatoes
1/2 cup of minced onion
1 cup of minced red peppers
1 can (15 1/4 oz) of corn grains, drained
1 cup of chicken broth
4 ounces of softened cream cheese
1 cup of Mexican style shredded cheese
1/4 cup of minced coriander
1 lime cut in fourths
Make it!
Heat the dressing in a large pan over medium-high flame. Add the chicken and potatoes; cover. Cook, stirring every now and then, for 15 to 18 minutes or until the chicken is well-done. Remove the chicken; keep it hot.
Place the onion and pepper in the pan and stir; cook for 5 minutes. Add the chicken and potatoes; cover. Let it boil; cover. Cook it over low flame for 3 minutes or until the potatoes are tender when pricking them with a fork. Add the cream cheese; cook for 2 minutes or until it has melted.
Remove the pan from the flame; add the shredded cheese and the coriander. Return the chicken to the pan. Serve with the lime fourths.
