Sweet mole

PREPARATION

Wash the chicken and cook it with a piece on onion, once cooked separate the pieces of chicken, the broth is used to blend the ingredients, once blended pass them through a strainer and stewed, season with sugar to taste.

The piloncillo and chocolate are added to the mole to melt with the heat, stir constantly to avoid sticking and to thicken a little.

Onion preparation
Place the already sliced onions in a saucer and add salt and lemon juice.

The Mole is served with the onion and Mexican Rice.

INGREDIENTS

1 chicken, skinless and chopped
5 Chiles Anchos (dried sweet pepper) Cleaned and browned in oil
5 Chiles Mirasol (pepper) Cleaned and browned in oil
1 1/2 chocolate tablet
2 oz of almonds
2 oz of peeled nuts
2 oz of raisins
3.5 oz of browned sesame seeds
1 stick of cinnamon
10 peppers
5 cloves
1 pinch of marjoram
1 pinch of cumin
6 small piloncillos (brown sugar cones)
2 cloves of garlic
Sugar to taste
1 sliced onion
