Tuscan chicken

You will need


4 boneless and skinless chicken breasts (1 lb)
4 ounces of diced cream cheese, diced
1/4 cup of water
1/4 cup of pesto
2 cups of cherry tomatoes
1 cup of five Italian cheeses, shredded
 
Make it!

Heat a large non-stick pan over medium-high flame. Use oil spray. Add the chicken and cover the pan with its lid. Cook the chicken for 5 to 7 min. per side or until cooked (165° F). Remove the chicken from the pan. Cover it keep it hot.

Add the cream cheese, water, pesto and tomatoes to the pan. Cook them uncovered over medium flame, stirring every now and then, for two minutes or until the cream cheese is melted.

Return the chicken to the pan. Pour the sauce on the chicken. Cook the chicken for 1 min. per side or until cooked (165° F). Sprinkle the shredded cheese.
